Tacos al Pastor π²π½
One of Mexico’s most iconic street foods, Tacos al Pastor feature marinated pork, usually served on small tortillas with pineapple, cilantro, and onions.
Ingredients:
- 2 lbs pork shoulder, thinly sliced
- 3 dried guajillo chilies
- 1 dried ancho chili
- 3 cloves garlic
- 1/4 cup white vinegar
- 1 tsp cumin
- 1 tsp oregano
- 1 pineapple, sliced
- Corn tortillas
- Cilantro, chopped
- Onion, chopped
- Lime wedges
Instructions:
- Rehydrate chilies in hot water, then blend with garlic, vinegar, cumin, and oregano.
- Marinate the pork in the chili sauce for at least 2 hours or overnight.
- Grill or cook the pork in a pan, along with pineapple slices.
- Serve in warm corn tortillas, topped with cilantro, onions, and a squeeze of lime.
