A classic Roman dish, Spaghetti Carbonara is creamy and rich, made with eggs, cheese, pancetta, and pepper.

Ingredients:

  • 12 oz spaghetti
  • 4 oz pancetta or guanciale, diced
  • 2 large eggs
  • 1 cup Pecorino Romano cheese, grated
  • Freshly ground black pepper
  • Salt, for boiling pasta

Instructions:

  1. Cook the spaghetti in salted boiling water until al dente.
  2. In a skillet, cook the pancetta until crispy.
  3. In a bowl, whisk together eggs, cheese, and pepper.
  4. Toss the hot pasta with pancetta, then quickly stir in the egg mixture. The heat of the pasta will cook the eggs into a creamy sauce.
  5. Serve immediately with more cheese and pepper on top.
