A beloved Greek dish, Moussaka is a hearty casserole made with layers of eggplant, minced meat, and béchamel sauce.

Ingredients:

  • 2 large eggplants, sliced
  • 1 lb ground lamb or beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14 oz) crushed tomatoes
  • 1/2 tsp cinnamon
  • 1/4 cup olive oil
  • 1 cup grated cheese (Kefalotyri or Parmesan)
  • 2 cups milk
  • 2 tbsp flour
  • 2 tbsp butter
  • 1 egg yolk

Instructions:

  1. Brush eggplant slices with olive oil and bake until golden.
  2. Sauté onions and garlic in olive oil. Add ground meat and cook until browned.
  3. Stir in crushed tomatoes and cinnamon. Simmer for 20 minutes.
  4. For the béchamel, melt butter, whisk in flour, and gradually add milk. Cook until thickened, then stir in the egg yolk.
  5. Layer the eggplant and meat sauce in a baking dish. Pour the béchamel sauce over the top.
  6. Bake at 350°F (180°C) for 30-40 minutes until golden.
