One of Mexico’s most iconic street foods, Tacos al Pastor feature marinated pork, usually served on small tortillas with pineapple, cilantro, and onions.

Ingredients:

  • 2 lbs pork shoulder, thinly sliced
  • 3 dried guajillo chilies
  • 1 dried ancho chili
  • 3 cloves garlic
  • 1/4 cup white vinegar
  • 1 tsp cumin
  • 1 tsp oregano
  • 1 pineapple, sliced
  • Corn tortillas
  • Cilantro, chopped
  • Onion, chopped
  • Lime wedges

Instructions:

  1. Rehydrate chilies in hot water, then blend with garlic, vinegar, cumin, and oregano.
  2. Marinate the pork in the chili sauce for at least 2 hours or overnight.
  3. Grill or cook the pork in a pan, along with pineapple slices.
  4. Serve in warm corn tortillas, topped with cilantro, onions, and a squeeze of lime.
