A signature Moroccan dish, Chicken Tagine features tender chicken simmered with aromatic spices, preserved lemons, and green olives.

Ingredients:

  • 4 chicken thighs, bone-in
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 preserved lemon, cut into quarters
  • 1 cup green olives
  • 2 tbsp olive oil
  • 1 tsp ground ginger
  • 1 tsp ground cumin
  • 1 tsp turmeric
  • 1/2 tsp cinnamon
  • 1/2 cup chicken broth
  • Fresh cilantro, for garnish

Instructions:

  1. Heat olive oil in a tagine or pot. Sear the chicken until golden.
  2. Add onions, garlic, and spices, cooking until fragrant.
  3. Stir in chicken broth, preserved lemons, and olives. Cover and simmer for 45 minutes.
  4. Garnish with fresh cilantro and serve with couscous or bread.
