Chicken Tagine π²π¦
A signature Moroccan dish, Chicken Tagine features tender chicken simmered with aromatic spices, preserved lemons, and green olives.
Ingredients:
- 4 chicken thighs, bone-in
- 1 onion, sliced
- 2 cloves garlic, minced
- 1 preserved lemon, cut into quarters
- 1 cup green olives
- 2 tbsp olive oil
- 1 tsp ground ginger
- 1 tsp ground cumin
- 1 tsp turmeric
- 1/2 tsp cinnamon
- 1/2 cup chicken broth
- Fresh cilantro, for garnish
Instructions:
- Heat olive oil in a tagine or pot. Sear the chicken until golden.
- Add onions, garlic, and spices, cooking until fragrant.
- Stir in chicken broth, preserved lemons, and olives. Cover and simmer for 45 minutes.
- Garnish with fresh cilantro and serve with couscous or bread.
